- Ginger – 1 inch (thinly sliced)
- Large cardamom – 2
- Cinnamon – 1 inch
- Cloves – 3-4
- Black pepper – 8-10
- Cumin – tsp
- Salt – 1.5 tsp or as per taste

• Wash the rice thoroughly and soak it in water for half an hour. Put oil in a pan and heat it, put green gram and carrot in hot oil, stir it and cover and cook on low flame for 2-3 minutes till it becomes crispy and take it out in a separate bowl.
• Put cumin seeds in the remaining oil, after roasting cumin seeds, add large cardamom seeds, chopped cinnamon, black pepper and cloves in small pieces and fry them lightly, add green chilies and ginger and fry them lightly, now soaked rice Add salt and fry while stirring for 2 minutes, the coating of all the spices should come well on the rice. Add 2 cups of water and mix it. Cover the pulao for 5 minutes and let it cook on low flame.
• Open the lid and add roasted green gram and carrot, also add lemon juice and some chopped coriander leaves and mix, cover the rice again and let it cook on low flame. Check the rice after every five minutes and stir it well, it takes about 15 minutes to cook the rice.
• Switch off the gas and keep the rice covered. Then After 10-15 minutes, Choliya rice pulao is ready, serve green gram pulao with curd, chutney, lentils or vegetables and eat it.
SERVING:
serve the CHOLIA pulao with dish as you want because it falls in main course . garnish with coriander or mint and also add safron for good taste .
